Let's bake: Carrot cake

First time buat carrot cake. Itupun lepas hubby sibuk sgt suruh buat kek selain dari butter cake or moist choc cake. Cake turn out great. Moist dan sgt best walaupun tak de frosting. Aku dah beli cream cheese tp hubby tak nak frosting.
I'm using Carrot Cake III recipe from allrecipe (with alteration - in pink) after reading good review from readers.

Ingredients
4 eggs
1 1/4 cups vegetable oil
2 cups white sugar (i'm using 1 1/2 cup)
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt (omitted)
2 teaspoons ground cinnamon (omitted)
3 cups grated carrots
1 cup chopped pecans (replaced with walnut)
1/4 cawan preserved kulit limau (chopped)
3 keping dried apricot (chopped)
Susu pekat manis & strawberry jam about 1 table spoon - jadikan 1/4 cawan
Frosting (omitted):
1/2 cup butter, softened
8 ounces cream cheese, softened
4 cups confectioners' sugar
1 teaspoon vanilla extract
1 cup chopped pecans
Directions
Preheat oven to 350 degrees F (175 degrees C).
  1. Grease and flour a 9x13 inch pan.
  2. In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots. Fold in pecans. Pour into prepared pan.
  3. Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
  4. To Make Frosting: In a medium bowl, combine butter, cream cheese, confectioners' sugar and 1 teaspoon vanilla. Beat until the mixture is smooth and creamy. Stir in chopped pecans. Frost the cooled cake.

After reading through 4-5 pages of the reviews, I consolidated the most referred alterations to this recipe to: 1) using 1 cup brown sugar and 1 cup white sugar 2) adding an extra teaspoon of vanilla extract 3) adding 1 8oz. can of crushed pineapple (I squeezed out most of the juice before adding it, I didn't want any extra fluids in the cake) 4) Added 1/4 teaspoon of nutmeg 5) added 1 extra teaspoon of cinnamon 6) used 3/4 cup canola oil and 1/2 cup applesauce. The result came out incredibly delicious - the cake was very flavorful and moist. For the frosting, I only used 3.5 cups of powdered sugar, and it was more than sweet enough, with a nicely balanced cream cheese vs. sweet flavor. If I would change anything again, I would use less pecans - it's a bit too nutty for my personal tastes. Also, I followed another reviewer's suggestion of grating the carrots with the large grater side (the one you use for cheese) so that you don't end up with a bunch of carrot mush and juice that can't be used. Will definitely make again! This is probably the best carrot cake I've ever had.

Rasanya aku bakar lebih-kurang 1/2 jam. Cepat betul dah masak. In future aku mungkin akan kurangkan gula lagi. Maybe jadi 1 1/4 cawan je. Klu 1 1/2 cwn ok cumanya aku lebih suka klu lagi kurang manis.. boleh le letak frosting nanti.

Dhill's cooking: mee goreng

Aku masak ini utk our dinner semalam.
Bahan2:
1/2 kilo mee kuning
1 biji tauhu (dipotong)
Sawi
2 biji tomato (potong 4)
Taugeh
Daun sup
2 biji Bawang merah - dihiris
2 ulas Bawang putih - di cincang
3 sudu besar cili kisar
1/2 cawan air
1 1/2 sudu besar sos tiram
2 sudu besar kicap
3 sudu besar sos cili
2 biji telur
Garam
2 sudu minyak masak
cara2- goreng tauhu- Bila tauhu sedikit kuning masukkan bawang merah sampai kuning then masuk bawang putih. Kacau then masuk cili kisar. Kacau sampai garing. Masukkan udang, air, sos cili & sos tiram. Bila didih masuk sawi, tomato & mee. Kacau rata & tuang kicap. Kacau lagi. Tambah garam klu perlu. Then masuk telur. Kacau. Then tabur taugeh. Kacau rata & tutup api.
Tabur daun sup. Boleh makan!

Dhill's cooking: Roast chicken with carrot & potato

Our dinner on 10/11(Isnin) & 14/11 (Sabtu) - ayam panggang dgn kentang & carrot.

Simple je bahan2 yg aku guna -
Ayam lebih kurang 6 ketul.
3 biji Kentang (potong wedges -6)
1 biji carrot (chunked)
4 biji bawang putih (tak payah buang kulit)
1 labu bawang besar (wdges)
1/2 sudu teh serbuk pati ayam
1/2 sudu teh garam
1 sudu besar sos tiram
1 sudu teh oregano
1 sudu teh rosemary
jus dr 1/2 biji lemon
- gaul semua. Masuk dlm foil dan seal. Then panggang dlm oven 200C selama 40-50 minit.

Paella versi dhillo

Satu cara nak cepat2 masak.. masak le yg simple.
So itu le yg aku buat rabu & ahad minggu lepas. Masak paella my own version..

Ini yg aku masak pada hari rabu 11.11.09. Just ada ayam je dlm nasi tu.

Yg ni pulak aku masak pada hari ahad 16.11.09.
Selain ayam, aku jugak letak sotong & udang.

Nanti klu sempat aku letak resepi kat sini.

Update:
Bahan2 -

  • 2 cawan beras basmathi - cuci & rendam dgn 2 1/2 cwn air dlm rice cooker.

Sementara beras direndam siapkan bahan2 kat bawah ni-

  • 5 ketul ayam
  • 10 ekor udang saiz sederhana
  • 2-3 ekor sotong - dipotong bulat
  • 1 ulas bawang besar - dihiris
  • 2 ulas bawang putih -dicincang
  • 10 biji bunga cengkih
  • 1 sudu besar pes tomato
  • 1 1/2 sudu besar rempah beriani (optional - klu tak de letak rempah sup pun ok)
  • 1/4 kiub pati ayam
  • 1 1/2 sudu teh garam
  • 1 1/2 sudu teh gula
  • 1 sudu besar mentega & 1 sudu besar minyak masak.

Cara2:

  • Panaskan minyak masak & mentega dlm pan.
  • Tumis bawang besar sampai kuning. Masukkan bawang putih & cengkih - kacau sampai naik bau.
  • Masukkan ayam - biar sampai sedikit kuning.
  • Masukkan pes tomato, rempah beriani/sup, stok ayam & sedikit air. Kacau dan masukkan sotong & ayam. Kacau lagi dan masukkan gula & garam.
  • Tuang dlm rice cooker yg berisi beras. Kacau rata & masak nasi seperti biasa.

Apple pie


Masak applepie ni utk hubby sabtu lepas.. bila aku dah buat baru dia ckp dia nak apple-pie macam yg biasa aku buat tu.. yg macam karipap. Klu sempat nanti aku post reepi kat sini. Ngantuk dah nak tidur..

Cucur sayur dgn ikan bilis

Aku buat cucur sayur ni Sabtu lepas for breakfast. Bahan2 sgt simple.. tak de sukat2pun, main agak2 je:
  • Tepung 2 cawan
  • ikan bilis segenggam - cuci & rendam dlm air bersih. Bila dah lembut ramas sampai sedikit hancur.
  • Kubis dihiris nipis
  • Isi jagung dlm 3/4 cawan
  • 2 sudu besar cili kisar
  • 1/2 sudu teh serbuk kunyit
  • 1 1/2 sudu teh garam
  • 1 1/2 dudu teh gula
  • Air

Satukan semua bahan dan gaul rata. Masuk air agak2 adunan tak terlalu pekat or cair. Rasa garam.. klu ok sedia utk digorang.

Biasanya aku taruk grated carrot jugak.. tp hari tu stok carrot tak de..


Butter cake

Butter cake yg mak long aku turunkan resepinya!
Requested by hubby last week. Sejak ada oven baru ni & sejak dapur aku dah siap minor renovasi.. hubby asyik le suruh aku masak. Baru2 ni dia mintak buat carrot cake. Barang2 dah beli kat Bake With Yen tp blm sempat nak buat lagi.. maybe besok baru aku buat.

Dhill's cooking: Nasi minyak & ayam masak merah

Selepas lebih sebulan aku tak masak btl2 (selain mee goreng & mee segera), hari ni terlebih rajin lak masak nasi minyak masa bfast pagi tadi. Aku masak lebih sikit so that boleh mkn for lunch.. tp rupa2nya bukan setakat lunch, sampai dinnerpun cukup.
For nasi minyak:
4 pot kecik beras basmathi (cuci & sukat air dlm rice cooker - then rendam 1/2 jam)
1 biji bawang besar dihiris (kes tak de bwg kecik)
1 inci halia di hiris halus (julienne)
Bunga cengkih, bunga lawang, kulit kayu manis
Daun pandan
Garam & gula
1 sudu besar pes tomato (optional)
1 sudu besar jus limau nipis
1 1/2 sudu besar minyak sapi
1/2 sudu besar minyak masak.
Cara2:
Tumis bawang dlm minyak sapi+minyak masak sampai kuning, masukkan halia, bunga cengkih, bunga lawang & kulit kayu manis. Bia dah bawang sedikit garing, masukkan ke dalam rice cooker yg dah ada rendaman beras. Masukkan garam, gula, pes tomato, jus limau nipis & daun pandan. Kacau & masak nasi macam biasa.
